Spicy Korean Cheese Garlic Bread

INGREDIENTS

High protein flour 1000g
SAF-INSTANT™ Gold Yeast 11g
Baker’s Bonus A 5g
Ibis Blue 10g
Shortening/oil 80g
Sugar 100g
Salt 18g
Milk powder 30g
Cold water 600g
Cream Cheese Filling Ingredients Measurements
Cream cheese 400g
Sugar 50g
Whipping cream 100g
Spicy Garlic Topping Ingredients Measurements
Butter 300g
Cooking cream 60g
Eggs 2
Honey 40g
Condensed milk 30g
Garlic powder 1 tablespoon
Garlic cloves, chopped 6g
Parsley leaves, chopped As needed
Curly chilies without the seeds, chopped As needed
Dry chilies As needed

PREPARE THE BREAD DOUGH

1. Mix all dry ingredients and beat for about 1 minute with a mixer.
2. Add water, stir until blended for about 3 minutes, and add shortening.
3. Stir until smooth on medium speed, rest for about 10 minutes, then cut into pieces of 45g-50g.
4. Shape each piece into rounds, arrange on a baking sheet, and rest for about 1 hour or until the dough doubles in size.

BAKING

1. Bake in oven at 200 ⁰C for about 13 to 15 minutes.

PREPARING CREAM CHEESE FILLING

1. Stir cream cheese until smooth.
2. Put in the sugar, mix well.
3. Add whipping cream, mix well, and put into a piping bag.

PREPARING SPICY GARLIC TOPPING

1. Melt butter.
2. Mix and stir all remaining ingredients in the bowl with the balloon whisk.
3. Add the butter and stir until blended.

FINISHING

1. Slice breads into 4 or 8 parts, but do not slice too deeply.
2. Put the cream cheese filling between the parts.
3. Dip breads in the spicy garlic topping until coated evenly.
4. Bake in oven at 180 ⁰C for about 13 minutes.
